Are you what you eat?

I believe so!  I can tell when I am eating more processed food, that my energy is at a nil.  When I am on my "food" game, I feel like I can handle many more things. Balance is vital especially as I age, which I am not giving in to. I have always loved taking a recipe and making it my own...a healthier version.
Having a few good friends, who like to eat healthy, can become great allies in sound boarding recipes and hearing what they may be up to in the kitchen, so eating doesn't become a bore! 

My best defense and a lesson in my life, is planning my dinner before the morning is over. If I don't plan, I realized, for myself, by the end of the work day, I almost could care less what I eat, which doesn't work for me. So whether it's in the Crock by 10 am or knowing what I am eating before leaving for work, does makes life much more enjoyable especally while eating dinner. They say "Simple" is best.
I believe in very few ingredients, because of time and saving money!
So yesterday was "Chicken on the Crock", and a big shout out to my husband!  He actually put this dinner together for us...

Chicken (breast), in the crock  pot with water covering.
Carrots (organic)
Green beans, frozen, (organic) about an hour before it should be done. Or if you are not home to do this, maybe skip it or cook then on the stove since they don't take too long.

I came home after work and pulled into the garage and yummA! A great way to end the day of knowing all I had to do was make an organic green salad with cukes and throw on all the above! I was in heaven ;)
We also had brown rice made the day before, another shout out to my hubby, so of course that was a no brainer!

For my son, who is 15 months, we blended all ingredients from the crock pot and brown rice in a small food processer with the "S" blade and it is done!
Then I was off to having fun for my evening.
