Crunchy Carrot Cake in the Raw

This is one of my favorites.  I wasn't sure if I would be able to enjoy it as a real carrot baked cake with icing. I am so pleasantly surprised.  I hope you enjoy the fact it takes about 10 minutes to make.

1 c organic carrots ( you can add a bit more)
1 1/2-2 c of pecans
2-4 dates (depending on your desire of sweetness)
1/3 c of raisins
1 tsp nutmeg
Cinnamon (optional)

I added all of these ingredients to my food processor (s-blade).  Process until just a bit of small chunkiness is achieved.  I made this recipe before, into a smooth texture.  This time I knew I wanted more of a crunch  and  prefered to bite into a nut or raisin.  Much better for me.  Make it your own!

 Shape on a dessert plate into a circle or you can use small spring form pans.
Have a taste and refrigerate the rest.  I have also put one
