Today, after being home most of the day with my son, toddling around and being buddies....he finally fell asleep so I could tackle the to-do list. But only a few things were accomplished at this point.
I was able to make broth soup. One of my quick and favorites. I started with:
Organic Broth 2 cups...later I added 2 cups filtered water
Organic Broccoli 1 c
Yellow Onion 1/2 small
Organic Carrots 5 small
I figured these were great for my blood type (according to Dr. Dadamo's: Eat Right for your Blood Type). So before I knew it I had a very nice quick soup to enjoy and the little guy loved it!!!
Okay with that all said, was there really time for baking cookies? No! So I decided to put together my own version of what is in the "raw food drawer" in my refrigerator...you should all have this. (John will go to the drawer and bring my nuts, fruits, raisins, etc., and it is a great compromise since he wants to tear up the kitchen).
Walnuts, Almonds and or Pecans 1 Cup total of all you desire.
Vegan Choc Chips - 1/4 cup
dates - 2
Coconut Oil (optional) 1 tbls
I will call this "going nuts for raw cookies" because, my stash was starting to become low. I wanted something sweet. So, I gather the rest of the almonds, walnuts and pecans.
A total of over one cup full. Put them into the food processor with the "S" blade. Don't over process these nuts because you will make round balls or want to flatten them somewhat. I added 2 dates and blended. Then about 1 Tbl. of Coconut Oil. I almost believe you might not even need the oil. I will have to try it next time with out. I think the oil in the nuts will allow you to shape your cookie with in reason.
Finally, I shaped them into balls and flattened a few out, adding only 2 vegan chocolate chips. You add what ever you desire! It is all about being simple and quick.
Off to the refrigerator they go and 2 into my tummy. These have saved me many times. I can freeze them if the kids aren't around to share with. And the best part for me is no baking and I don't feel deprived.
