I have been a salad eater since a childhood friend introduced it to me while eating with her family. We mostly ate the typical 5 course meal for dinner. I am caught between a raw foodist, vegetarian, and a blood type dieter. I really don't care to eat much meat, but the memories of a roast, dad's burgers, grandmother's ham brings me home. I do not eat pork any longer, but will have the occasional chicken and red meat.
Vegetables seem to make me the happiest. Fruit is also right up there besides God made these items perfectly. A "journey" or constant discovery...for me on creating those wonderful new meals (and memories) has begun.
So the day began today with Ezekiel bread toasted, with tomato and yes, a bit of mayo (working on that).
I made in the food processor my fruit/nuts snack.
Pecans 1 cup
Dates 2
Coconut Oil 1Tbl.
5-8 Strawberries (organic) arranged on top, to compliment my mango
This is my base of 3 small meals or deserts, whatever the mind is seeking.
Then 1 mango smashed by baby John and I, or you can put in food processor.
I was torn between a smoothie with the fruit today and bring a handful of nuts but this dish seemed more fun.
For my main meal at lunch will be the garden tomato and cukes with avocodo dip. I find eating lighter while working keeps me more productive.
Dinner might be brown rice with broccoli.
Remember keeping it simple when your busy does make it taste so much better! Enjoy and remember Make it your own!
